Bow Tie Pasta with Salmon, Mint
and Peas
This

Makes 6 servings.

Ingredients
- 1 pound bow-tie, or other short pasta (whole wheat or other whole grain)
- 1 1/2 pounds skinless wild salmon fillet
- Coarse salt and ground pepper
- Juice and finely grated zest of 2 lemons
- 1-2 cups of fresh peas or 1 package (10 ounces) frozen peas, defrosted
- 2 tablespoons unsalted butter
- 1/4 cup chopped fresh mint, plus more for serving
Directions
- Cook whole wheat pasta in a large pot of boiling salted water until
al dente, according to package instructions. Drain, reserving 1 cup
pasta water; return pasta to pot.
- Meanwhile, season salmon with salt and pepper, and place in a medium
skillet. Add 1/4 cup water and lemon juice and zest. Bring to a boil
over medium heat, cover, and let steam for 10 minutes.
- Add peas, and continue to steam, covered, until peas are tender and
salmon is opaque throughout, 2 to 3 minutes more.
- Slide entire contents of skillet onto pasta; add butter and mint.
Season with salt and pepper. Toss carefully to combine, gently breaking
salmon into large flakes. Add reserved pasta water as necessary to
smooth sauce. Serve immediately, sprinkled with additional mint, if
desired.

Hello Friends...
I want to share a gem that I came across recently. Here it is ...
"The vibrational difference between hope and
fear is the difference between recovery or not. Likewise, the vibrational
difference between hope and fear is the difference between surviving and
thriving" … Abraham/Hicks.
If you notice you are in fear mode right now (meaning you do not feel fully
good and are worried about something, anything), here’s a couple of quick
ways to shift your vibe from fear to hope, one small shift at a time:
- Take one small (and I mean small) step toward reaching a goal.
One tiny step toward something that is meaningful for you. For
example, if your home feels like a mess and you want it clean and
de-cluttered, start with the freezer portion of your fridge. Or
start with one small drawer. That’s it. Nothing else. When you’re
done, tune in and notice the shift in your vibe. Feel better?
- Ask yourself one of the
Right Questions by Debbie Ford (my clients love these
powerful questions). For example, if you’re worried about any
relationship, place your attention onto the relationship and ask
yourself "Am I standing in my power, or am I trying to please
another?" Or, "Am I looking for what’s right or am I looking
for what’s wrong?" Powerful questions! Notice that when you take
one small action to move back into your power, you’ve also taken one
move from fear to hope … and you might even notice that you’ve moved
from fear to faith! Powerful indeed!
