Healthy and Delicious Food!

Energy Balls - Yum!

I give all the credit to my mom Jan for experimenting until she perfected this wonderful recipe for yummy energy balls. Simple ingredients, delicious taste and perfect ease to grab and go for a healthy snack - it's all great.

This recipe makes 20 good size energy balls.

4 cups rolled oats (slow cook oats)
1 1/2 cups walnut pieces
2 cups prune puree (directions below)
3/4 cup coconut
1/3 cup cocoa

Measure all ingredients into a bowl and mix together by hand. Then shape into balls and roll each ball in some extra coconut. Store in your fridge. Enjoy!

Prune Puree Directions:
Soak 2 cups of pitted prunes in 1 2/3 cups warm water overnight. Then puree the prunes in a food processor.

 

Simple Whole Grain Pizza
(with gluten free option)

When I’m really in the mood for a pizza, this feels simple to make and absolutely delicious fresh out of the oven!

2 Tbsp active yeast
2 Tbsp turbinado sugar (a type of raw sugar sold in health food stores)
2 cups very warm (not boiling) water
2 cups organic unbleached white flour
2 cups organic whole wheat pastry flour
1 Tbsp olive oil
1 Tsp salt
1 Tbsp dried basil

Note: For a gluten free option, try using Bob’s Red Mill Gluten Free All Purpose Baking Flour (*adding Xanthan Gum as suggested on package).

Place the yeast and the sugar in a small bowl, add the warm water and dissolve until the yeast expands or "proofs". In a large bowl, combine the flours, oil, salt, and basil. Make a hole in the center of the flour and pour the proofed yeast into it. Mix together with your hands and knead the dough in the blow until smooth in texture, about five minutes. If the mixture is very dry, add more water. Place dough into a clean, oiled bowl and cover with a damp dish towel. Let rise until doubled in size, about one hour.

When the dough has risen, punch it down with your hand, flattening it out. Preheat the oven to 350 degrees. Divide the dough in half and roll out each half into round pizzas. Place on oiled pizza pans. Top with your favorite toppings. Bake for about 20-25 minutes or until browned and crusty.

Experiment with toppings. Try the following if you like...

  • 2 cups of roasted vegetables cut in bit-size pieces: carrots, zucchini, eggplant, red bell peppers
     
  • Sliced tomatoes with 2-3 tablespoons thinly sliced fresh basil
     
  • 1/2 pound mushrooms sautéed with 1 cup chopped leeks
     
  • 3 cups sautéed spinach
     
  • Goat feta cheese, black olives, artichoke hearts
     
  • Certified organic lean ground beef

The Power of Segment Intending

Segment IndexingSegment intending is a powerful and simple way to practice using the power of intention in your everyday life. It’s excellent for turning worry and stress into peace and success.

Segment intending is used for any "segment" of your day or life that you currently find stressful or would simply like to have more success with. Examples of segments that you might want to feel more relaxed about or experience more success with include your commute to and from work, your evening meal with your family, a discussion with a particular colleague at work, an upcoming meeting, a job interview, an upcoming flight, etc. You get to choose any segment or part of your day (or life) that you would like to feel more success with.

Once you’ve chosen your segment, the whole process can take as little as 1 minute with practice - yet I recommend that you set aside 5 minutes to start. Start by closing your eyes and taking a couple of deep breaths, allowing your body to relax.

Next, envision yourself moving through that event or segment successfully. What would success look like? Use your imagination to see yourself going through this experience successfully. For example, if you’re worried about making a good impression during a job interview, you might see yourself greeting your potential employer(s) with confidence and an easy smile. You might see yourself sitting upright and relaxed in the chair and fully focused and present, really listening to each question and responding clearly and confidently – with enthusiasm, etc. You might see your potential employer looking pleased with you. See this as clearly as you can and enjoy this vision.

And, while you are visualizing this, aim to feel the way you’d like to feel as well. ... if you’d like to relax and feel calm and content, then feel it. Pretend you are there now, feeling calm and let your body relax into the calm feeling. If you’d like to be able to feel present while someone is speaking (instead of thinking about what you’re going to say next), notice how good it feels to feel present – let yourself feel relaxed and present.

Segment intending is like a dress rehearsal for success! Research shows you’ll have a 30% higher level of success during the segment. In other words, you will be 30% more likely to have things go the way you’d really like them to. Whether you’re talking about a job interview, a potentially difficult conversation, a morning commute, or your wedding … things are highly likely to go better with segment intending.

I encourage you to give it a try. My coaching clients often share their amazement that a tool this simple could make such a noticeable difference.
