Fabulous Fruit Salad
This is one of my favorite breakfasts, especially through the spring and
summer. It's simple, colorful, tasty and bursting with of nutrients … Lee.
Cut up several types of fruit you enjoy (apple, pear, cherries, banana, berries, etc) into your bowl and mix. Then squeeze fresh lemon juice all over it (this is such fun … lots of juice gives it a good bite and keeps any left-over fruit fresh in your fridge too). Then sprinkle two ounces (small handful) of walnuts on top. Ta Da! Now, sit back and savor each colorful, healthy bite.
Caroline's Famous Turkey (or Chicken) Soup!
I know it's the May/June issue of this newsletter, yet I'm following my
instinct to share this truly "best ever" (my opinion of course) chicken soup
recipe. I practically lived on this soup this past winter and really felt
the health benefits. It's easy to make, absolutely economical and oozing
with good things. Enjoy … Lee
- Remove meat from a turkey or chicken carcass and set
aside (note: specialty or certified organic turkey/chicken remains the
healthier choice whenever possible).
- Cover the carcass with water and boil for 2 hours.
Remove and discard the carcass; reserve the liquid and meat pieces.
- In a very large pot, sauté 2 large leeks in 3 tbsp
turkey/chicken fat or olive oil. Add 4 chopped celery stalks and 2
chopped carrots.
- Add turkey stock, 2 vegetable-bouillon cubes or pan
drippings from roasted turkey or chicken (remove fat first), and
additional water if needed. Add ½ cup barley (or rice).
- Simmer until vegetables are tender and barley is soft
– about 1 hour. Add saved turkey/chicken meat, a dash of fresh squeezed
lemon juice, salt and pepper, and serve.

It’s with incredibly great pleasure that I'm announcing a big boost in Power
of Wellness creations and events to come soon! For the past seven years I’ve
been blessed to notice my business and passion as a Wellness & Life Coach
and Speaker grow and expand; and what a brilliant journey it's been.
The very best thing about it is the human connection – every coaching client
honors me with their truth, their dreams, their fears, and their unique
strengths and gifts. We share a space of unconditional positive regard,
respect and truth. We do whatever is needed to claim a truly happy and
healthy life for them ... and claim it they do, one perfect step at a time.
It’s a beautiful thing to witness and share. The very best. And then there’s
the celebration and fun along the way – all of it is pretty wonderful stuff.
And there's the variety of employee groups/teams and clubs or associations
that invite me to come and speak during their special events. Every group is
as unique as every individual in it. I love to see the beautiful smiles,
hear each unique thought that is shared, and feel the energy of all of us
coming together, sharing, laughing and learning. What a gift.
In short, it's very clear to me that this is both a big calling and a big
joy. So much so that it’s time to expand even more. I have a file chock full
of ideas for things I feel led to create ... a couple of books in draft
form, an audio CD of me sharing my Favourite Wellness & Self-Care Tools,
Retreats for small groups of wonderful women, and so much more. In order to
make the space for this, I’m taking a full year unpaid leave of absence from
my part-time teaching position at Douglas College. A leap of faith. I know
that it's a gift to be able to do this. And while I'll miss the classroom
teaching and day to day connections the most, I know I’m simply shifting
classroom locations! As one of my gifted students reminded me "Lee, every
time we walk out the door we are teaching ... the world is the classroom".
True.
So, stay tuned for more. Come June I'll be in full blown creation mode!
Yippee. I'm bursting with excitement and gratefulness for what is here now,
and what is coming. Just to give you a little example of how the Universe is
supporting this move (I could write a book just on this) ... it occurred to
me about a month ago that I'd like to celebrate this transition with a new
business card, one to match the homepage. It also occurred to me that I knew
absolutely nothing about how to make this happen. Then, a week ago, another of my gifted students emailed me
to sign up for my newsletter, and I noticed that she had a website and
business of her own, so I took a look. Well. It turns out, don't you know,
that she’s a graphic designer! Long story short, she is creating my new
business card and her work and professionalism thus far are both excellent.
She is even teaching me about the process along the way, and connecting me
with a "green" printing company. Perfect. Because she's been such a gift,
I've asked for her information, to share with you here today (see below).

- Total average daily energy expenditure was 31%
higher in summer than winter
