The world will tell you that success is achieving what you set you to do. It will tell you that success is winning, finding recognition and/or prosperity. All or some of the above are usually by-products of success, but they are not success. What the world doesn't tell you - because it doesn't know - is that you cannot become successful. You can only be successful. Don't let a mad world tell you that success is anything other than a successful present moment And what is that? There is a sense of quality and presence in what you do, even the most simple action. That is success.

Turkey-Mushroom Burgers
Moist, flavourful and heart healthy!

Turkey-Mushroom BurgersGround turkey is the standard lean alternative to ground beef--and a good one--but burgers made from it can be dry and bland. These turkey burgers are particularly moist and flavorful because mushrooms are used to extend the ground meat.
Makes 6 servings.

Nutrition Profile:
Low Calorie | Low Sodium | Low Sat Fat | Heart Healthy
 

2 slices whole-wheat sandwich bread, crusts removed, torn into pieces
8 ounces white mushrooms, wiped clean
3 teaspoons extra-virgin olive oil, divided
1 medium onion, finely chopped
2 cloves garlic, minced
1/2 cup Scallion-Lemon Mayonnaise - optional  (recipe follows)
1 pound lean ground turkey breast
1 large egg, lightly beaten
3 tablespoons chopped fresh dill
1 1/2 tablespoons coarse-grained mustard
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
6 whole-wheat buns (optional)
Lettuce leaves & tomato slices for garnish
 

1. Place bread in a food processor and pulse into fine crumbs. Transfer to a large bowl. Pulse mushrooms in the food processor until finely chopped.
2. Heat 2 teaspoons oil in a large nonstick skillet over medium heat. Add onion, garlic and the mushrooms; cook, stirring occasionally, until tender and liquid has evaporated, about 10 minutes. Add to the breadcrumbs and let cool completely, 15 to 20 minutes.
3. Meanwhile, prepare Scallion-Lemon Mayonnaise, if using.
4. Preheat grill to medium-high.
5. Add ground turkey, egg, dill, mustard, salt and pepper to the mushroom mixture; mix well with a potato masher. With dampened hands, form the mixture into six 1/2-inch-thick patties, using about 1/2 cup for each.
6. Oil the grill rack. Brush the patties with the remaining 1 teaspoon oil. Grill until no longer pink in the center, about 5 minutes per side. (An instant-read thermometer inserted in the center should register 165°F.) Meanwhile, split buns and toast on the grill for 30 to 60 seconds, if using. Serve burgers on buns, garnished with lettuce, tomato and Scallion-Lemon Mayonnaise, if desired.

MAKE AHEAD TIP: Prepare through Step 5. Wrap individually and refrigerate for up to eight hours or freeze for up to three months. Thaw in the refrigerator before cooking.

 

Scallion (green onions) Lemon Mayonnaise
Use this tangy mayonnaise as a sandwich spread or as a dip for a platter of grilled summer vegetables.

Makes about 1/2 cup

1/4 cup nonfat sour cream
2 tablespoons low-fat mayonnaise
1 1/2 tablespoons chopped scallions
1/2 teaspoon freshly grated lemon zest
1 teaspoon lemon juice
Pinch of salt, or to taste
Freshly ground pepper to taste

Combine sour cream, mayonnaise, scallions, lemon zest, lemon juice, salt and pepper in a small bowl; whisk until blended.

Fresh Food and Farmer's Markets - One of my Favourite Things!

Farmer's MarketOne of my favorite spring and summer things to do is journey to one of our local farmers markets on a Saturday morning.  At first I went for the fresh food, the low prices and to support our local farmers and economy.  Then I discovered how much fun the market’s are.  Farmers’ Markets’ have their own culture and most are full of treats for the senses including musicians, singers, and artists to entertain, specialty coffees and tasty hot meals, and a palpable sense of contentment, good will and joy among the buyers and sellers alike – yes, it really is a positive vibe!  And then there’s all that fresh produce, meats, cheeses, herbs, teas, jams, breads, etc, etc.  All I can say is “Yum!”. 

So, if you haven’t been, I suggest giving one a try … you could ask around in your neighborhood, at your local health food store, or Google to find one near you.  For Vancouver Farmers’ Markets, here are your options:  http://www.eatlocal.org/.  Bon appetit.
